Do you ever find yourself in a position where you have limited time to prepare and cook a meal? You might get home late from training or work, or just be in a position where you've been busy and time has slipped you by!
For athletes it is very important that you are getting the nutrition you need in order to fuel your training and to recover properly, regardless of how much time you have to cook.
Luckily for you the Australian Healthy Food Guide has put together a 5pm Panic recipe collection.
The 5pm Panic collection consists of hundreds of recipes that can be put together in 30 minutes or less. No matter what you have in the pantry the Guide will have a nutrient packed recipe suitable for your needs and taste.
Try out this recipe for Brown Rice, Lamb and Spice-Stuffed Vegetables for example...
Time: 30 minutes
8 large Vine-Ripened Tomatoes
250g Packet of Microwave Brown Rice
400g Lamb Mince
1/2 teaspoon of All Spice
6 Long Green Shallots, trimmed, thinly sliced
100g Reduced-Fat Feta, crumbled
2 Green Capsicums, halved, deseeded
4 cups Rocket Leaves, to serve
1. Preheat oven to 180*C and line a large baking tray with baking paper. Cut the top off each tomato, scoop out flesh and pulp and reserve, leaving a 1cm thick shell.
2. Roughly chop reserved tomato flesh. Place into a large bowl with the reserved tomato pulp, brown rice, mince, all spice, shallots and feta. Stir until all ingredients are well combined and season with freshly ground black pepper.
3. Stuff the tomatoes and capsicum shells with rice mixture and place onto the prepared tray. Bake for 20 minutes, or until vegetables are tender and stuffing is golden and cooked. Serve with rocket leaves.
